James Tracey might be the coolest chef we have ever shot for Munchies. When we first meet up with someone, there is usually a 30-minute warm-up period, but not with James. Within seconds after we arrived at Craft, we were looking at freshly slaughtered suckling pigs, meeting his all-star butcher, and joking around with his sous chefs, Melanie and Mac. We were shocked by how relaxed James is considering he’s the executive chef of Craft and Colicchio and Sons. He likes his razor clams raw and his beer cold. He also likes Il Buco Alimentari & Vineria, Motor City, and Paddy Maguire’s as after-work drinking destinations. Chef Tracey is the man. Enjoy!
