Ingredients
for the spinach pie filling:
4 cups raw spinach
4 scallions
1 cup dill
1 cup mint
3 cups boiling water
2 ½ tablespoons olive oil
½ cup feta
for the batter:
2 cups all-purpose flour
½ cups water (add more as needed)
olive oil for pan
Directions
- Chop up raw spinach, scallions, dill, and mint. Add boiling water and squeeze all the water out. Add the olive oil to the spinach mixture. Add the feta cheese.
- Add the water and flour in a bowl. Mix really well, adding more water or flour depending on consistency. Roll out the dough until it’s a very, very thin sheet. Cut the dough into squares (about six). Put spinach filling in the middle and fold over all edges so it’s completely sealed.
- Add a bit of oil into the frying pan and place the pies in the pan. Cook until they are golden brown on each side.
