Ingredients
300 ml pink grapefruit juice
26 grams knox unflavored gelatin packets
112 grams granulated sugar
125 ml gin
125 ml St. Germain
30 ml Luxardo Cherry liqueur
pop rocks
Directions
1. In a small saucepan, combine the grapefruit juice with the gelatin and 1 1/3 cup water. Let it sit for 2 to 3 minutes.
2. Add the sugar and heat over medium, stirring, until the sugar and gelatin are both dissolved. Do not boil! Set aside to cool for 1 minute.
3. Stir in the booze. Transfer to a 9-inch-by-13-inch baking dish and refrigerate until set, about 3 hours.
4. Using a pizza cutter or knife, cut the jello into squares, and top with pop rocks before eatings.
