Ingredients
5 raspberries
3-4 blackberries
1 cup|237 ml balsamic vinegar
1 tablespoon honey
½ teaspoon dried oregano
2 garlic cloves, minced
kosher salt, to taste
1 cup|237 ml olive oil
2 cups kale, roughly chopped
1 tomato, cut into wedges
½ red onion, thinly sliced
1 carrot, peeled

Directions
- Make the dressing: In a small mixing bowl, whisk together the berries with the vinegar, honey, oregano, garlic, and a pinch of salt, gently breaking down the berries as you do. Slowly drizzle in the oil while whisking constantly to form a vinaigrette.
- In a large bowl, toss the kale with the tomatoes and onion.
- Using a peeler, take off the outer skin of a carrot, then peel carrot directly into the salad bowl.
- Add dressing to salad to taste and toss to coat the salad.
