Mario stopped by the MUNCHIES Test Kitchen to cook for Jimmy Fallon and Mary Giuliani during an episode of Moltissimo , and he made this ravioli al’Amatriciana—his take on the town of Amatrice’s classic dish, bucatini Amatriciana.

Packed with guanciale and tomatoes, then tossed with butter, these ravioli are like little pouches of heaven.
If you don’t feel like shelling out for guanciale, feel free to use bacon—or any other cured pork product. Fresh pasta + salty cured pig + tons of butter and Pecorino Romano? That’s amore.
