Ingredients
12 ounces|345 grams de-stemmed strawberries
2 tablespoons granulated sugar
half a lemon, juiced
pinch of kosher salt

Directions
- Dice strawberries into ¼-inch pieces and put into a small bowl. Sprinkle with sugar, salt, and lemon juice. Allow to sit for 30 minutes, stirring occasionally.
- Remove approximately half the strawberry pieces with a slotted spoon and set aside, leaving the juice along with the other half. Purée remaining strawberries and juice in blender or food processor, then mix back into strawberry pieces. Chill in fridge until ready to serve.
